A Night To Remember

I planned a Thai dinner on Sunday. While in Thailand, Stacey asked to be shown how to fold the cold towels we received at the Marriott for refreshing ourselves upon arrival. We now offer these to guests at special meal times. Buy white wash cloths, and soak them in lemongrass essential oil....can use any scent but we enjoy lemongrass. Follow these pictures for folding techniques.




After the towels are prepared, put them either in the fridge, if it is summer, or in the microwave if a warm towel is desired. Present to guests before the meal is served.

Lindsey made Tom kha gai soup, which is such a family favorite.
Sara made the cashew chicken and it was divine.
Ryan prepared cucumbers with fresh lime juice and salt and pepper. He learned this side dish in Mexico, but it was perfect to complement the strong Thai flavors.

The kinder enjoyed bringing the table out of the playhouse for
their meal.


Caleb enjoyed a moment of quiet reflection. Actually he has a gun in his hand and is contemplating where the 'big game' are hiding out.
For dessert I prepared Flan with fried bananas.
After going to the river to throw rocks and watch Ryan and Trace and Caleb try to divert the flow of the river........BOYS!..... we settled in for the real adventure of the night. Bat counting. Ryan noticed earlier this week that 8 bats had flown out from a small hole near the top of the chimney off our master bedroom. I thought I had seen 15 the next night as I sat at the computer and watched them fly by the window. I was sure I was on crack or something because that was ludicrous to think there could be that many.
We settled in for the count. Bets were placed. Ten....... sixteen............. thirty one............. Are you freaking kidding me?
Forty..........forty eight........................fifty two.......................now we are laughing madly.............fifty nine.....................Sixty......still counting................finally stopped at SIXTY FIVE bats flying out from a tiny hole in our house. Don't worry. Bundy has it figured out how to plug the hole. He's already been in our attic to make sure they hadn't gotten in there and they haven't. This will always be A NIGHT TO REMEMBER!

You might make a believer out of me with your Thai cuisine! Recipes? And I'm excited about the towels!!! What a great idea! And the bats were hysterical! If you see Edward, give him a kiss for me!) (Cullin) Well, hopefully you don't have many biting insects around! I heart bats for that reason.

Mary Ann, I think that it's time for Carol and I to come and visit! You did offer and after what you described from the meal to your typical frills... perfection as always. And the bats... you really do go all out to make things exciting and fun, don't you! I loved reading this entry! Have a great week!

What a fun day. The bat count freaks me out! Hopefully the problem is solved- or else when you're alone next, how will you ever go outside alone in the dark? Oh ya- that's right- you would never do that anyway :)
